Fruit and Redpack Tomato Salad Recipe

Did you know that May is National Salad Month. I didn't either till I received a gift pack from Redpack Tomatoes containing 3 cans of Redpack Petite Diced tomatoes and 6 light and easy salad recipes.

For their second annual "Toss in the Flavor", Redpack Tomatoes is running a promotion from May 13 to June 10 on Facebook. During this period, they will share a new collection of Redpack salad recipes featuring Redpack Petite Diced Tomatoes along with seasonal fruits and vegetables.

I've checked out a few of their recipes and there's lots of varies salads you can make and enjoy this month. One salad recipe I think would be great to make during this warm weather is this Delightful Fruit and Tomato Salad. It's so quick and healthy!

Fruit and Tomato Salad for Redpack Tomatoes Toss in the Flavor Promotion

Delightful Fruit and Tomato Salad

Servings: 6
Preparation Time: 20 minutes


Ingredients

1 head iceberg lettuce, torn into bite-size pieces
1/2 pound fresh strawberries, sliced
1/2 pound fresh blueberries
1 mango, peeled, seeded and cut into strips
1 (14.5 ounce) can Redpack® Diced Tomatoes In Juice, drained or 1 (14.5 ounce) can Redpack® Petite Diced Tomatoes, drained
1/2 cup raisins
1/4 cup sliced almonds, toasted
1/4 cup chopped red onion
Real bacon bits


Directions
  • Toss lettuce, strawberries, blueberries, mango, REDPACK® DICED TOMATOES in JUICE, raisins, almonds and onion together in a bowl. Cover and refrigerate for 30 minutes to allow flavors to blend.
  • Sprinkle real bacon bits over salad just before serving.

I'm on a low carb diet but my Dr says I have to include tomatoes so I make a "salsa" every day and have some on my breakfast omelet, my lunch salad and finally to top my mashed cauliflower with dinner. My salsa will be diced sweet and hot garden peppers, diced red pack tomatoes, lemon juice or lime, diced hass avocado and sea salt. yummo
